Codfish With Scrambled Eggs
What You Need:
  • ¼ pound salt cod (Soak 18-24 hours; change water several times.)
  • 4 cups cold water
  • 2 tablespoons freshly rendered lard or peanut oil
  • 3 medium yellow onions, peeled and finely chopped
  • 2 tablespoons Annatto Oil
  • 8 eggs, beaten
  • Salt and freshly ground black pepper to taste

  • How To Cook:
    1. Place the soaked and drained cod in 4 cups of fresh water and bring to a simmer, covered. Cook for 15 minutes and drain. Cool and flake the fish.

    2. Set aside. Heat the lard or oil in a large frying pan and saute the onion until very light brown. Add the salt cod and achiote oil.

    3. Stir together for a moment over medium heat and then add the eggs. Cook, stirring now and then, until the eggs are done to your taste. Season with salt and pepper.

    TIP:
        Be sure to rinse the dried cod often as it soaks. Otherwise its taste will be too salty.
