Green Banana Salad
What You Need:
  • ½ cup vegetable oil
  • 2 medium yellow onions, peeled and thinly sliced
  • 2¼ pounds green bananas, peeled and sliced ¼ inch thick
  • 2 tablespoons white wine vinegar
  • Salt and freshly ground black pepper to taste
  • Juice of 1 lime

  • How To Cook:
    1. Mix all of the ingredients as for potato salad.

    2. Let them sit for 1 hour or so before serving.

    3. You will startle the kids with this most unusual dish.

    NOTE:
When buying the green bananas, be sure they are just a tiny bit soft. If they are too hard, the salad will be dry.
