What You Need: |

¼ cup fennel seeds
3 tablespoons salt
2 teaspoons sugar
1 tablespoon each of ground white pepper and freshly ground coarse black pepper

How To Cook: |
|
|
1. Whirl the fennel in a blender until coarsely crushed, or crush it in a mortar and pestle. Blend with salt, sugar, and peppers and store in a covered jar.

2. Use this mixture to sprinkle on in the inside of a boneless pork loin roast and then roll up the meat and tie it on the outside with string. Rub some of the seasoning on the outside also.
|
3. Place the pork roast on a rack in the oven and roast for 30 minutes per pound in a preheated oven at 325°F or until a meat thermometer registers 165°F when inserted in the center of the roast.
|
4. This seasoning is a very delicious addition to pork.
