Before you begin this dish, understand that everything ¦ everything is to be cut by hand into a very small dice.

What You Need: |

THE SALAD
˝ cup diced salted herring (Leave the fish whole and soak for 12 hours in fresh water, changing several times. Drain and pat dry. Skin and debone.)
2 pounds baking potatoes, boiled, peeled, and diced
1 cup diced boiled ham
1 cup diced roast pork
4 hard-boiled eggs, peeled and diced
˝ cup diced celery
˝ cup diced cucumbers (Pickling cukes are preferable here.)
1 medium yellow onion, peeled and diced
1 cup diced pickled beets (Save the juice for the dressing.)
˝ cup golden delicious apple, peeled, cored, and diced
˝ cup coarsely chopped parsley
THE DRESSING
1 cup sour cream
1 cup mayonnaise
1 tablespoon prepared horseradish
2 tablespoons Dijon mustard
Juice of 1 lemon
Salt and freshly ground pepper to taste

How To Cook: |

|
1. Place all of the salad ingredients in a bowl.
|
2. Mix the dressing, adding a bit of the pickled beet juice to taste, and toss with the salad.
|
3. This is best served just after it-is made, about room temperature.
