Potato Salad
(Rosolos)
Before you begin this dish, understand that everything ¦ everything is to be cut by hand into a very small dice.

What You Need:
THE SALAD
  • ˝ cup diced salted herring (Leave the fish whole and soak for 12 hours in fresh water, changing several times. Drain and pat dry. Skin and debone.)
  • 2 pounds baking potatoes, boiled, peeled, and diced
  • 1 cup diced boiled ham
  • 1 cup diced roast pork
  • 4 hard-boiled eggs, peeled and diced
  • ˝ cup diced celery
  • ˝ cup diced cucumbers (Pickling cukes are preferable here.)
  • 1 medium yellow onion, peeled and diced
  • 1 cup diced pickled beets (Save the juice for the dressing.)
  • ˝ cup golden delicious apple, peeled, cored, and diced
  • ˝ cup coarsely chopped parsley

    THE DRESSING
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 tablespoon prepared horseradish
  • 2 tablespoons Dijon mustard
  • Juice of 1 lemon
  • Salt and freshly ground pepper to taste

  • How To Cook:
    1. Place all of the salad ingredients in a bowl.

    2. Mix the dressing, adding a bit of the pickled beet juice to taste, and toss with the salad.

    3. This is best served just after it-is made, about room temperature.

    To Serve: 8 - 10
