The sesame seed appears in most of the desert cultures, and it is highly prized in China as well. During biblical times the oil from the seed was commonly used in cooking. A paste was ground from the roasted seeds and used as a flavoring in many dishes, sometimes as a meat substitute.

What You Need: |

˝ cup Homemade Yogurt or yogurt from the market
2 tablespoons tahini (sesame paste)
1 medium tomato, chopped
1 cucumber, peeled and chopped
1 green bell pepper, cored, seeded, and chopped
2/3 cup finely chopped parsley
Salt to taste

How To Cook: |
|
|
1. Gently mix the yogurt and tahini, and then fold in the vegetables, along with the parsley and salt.
|
2. Serve with red meat or fish dishes.
