Broad Bean Cutlets
What You Need:
  • 1 pound broad beans (or sugar beans)
  • 1 oz margarine
  • 2 eggs
  • 1 teaspoon minced onion
  • 1 teaspoon chopped parsley
  • 6 oz crushed potatoes
  • Breadcrumbs
  • Salt and pepper to taste

  • How To Cook:
    1. Cook beans in boiling water with salt and onions.

    2. Puree by rubbing through a sieve.

    3. Add melted margarine, crushed potatoes, seasoning, and enough of the beaten eggs to bind into a paste.

    4. Add enough breadcrumbs to shape into cutlets and coat with more breadcrumbs Fry in deep hot fat.

    5. Drain and serve warm.
