How To Cook: |

1. Set all ingredients except lime peel and sage to boil for about 3 hours.

2. One hour before straining, add a piece of lime peel, and some sage.
|
3. Strain through a fine sieve.
|
4. Add some sherry and pieces of the turtle meat when serving.

VARIATION THICK TURTLE SOUP:
|
1. This is prepared in the same way as Clear Turtle Soup, except that it is thickened with 1 oz. of corn flour mixed with a little liquid for every quart of the soup.
