Crawfish Newburg
What You Need:
  • 2 cups crawfish, cooked and diced
  • 2 tablespoons lime juice
  • 3 tablespoons butter or margarine
  • 1 can (14 oz) evaporated milk
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 egg yolks, well beaten
  • 1 teaspoon sherry

  • How To Cook:
    1. Sprinkle lime juice over crawfish and set aside for 10 minutes.

    2. Put butter or margarine in saucepan, add crawfish and cook 5 minutes over low heat.

    3. Slowly stir in milk, salt and pepper, heat to boil. Add egg yolks and cook for 2 minutes longer.

    4. Add sherry just before serving.
