Peas And Rice
What You Need:
  • 2 tablespoons cooking oil
  • 1 small onion, sliced
  • ½ green pepper, sliced
  • 1½ tablespoons salt
  • 3 cups water
  • ¾ cups cooked pigeon peas
  • ½ cup tomato paste
  • ¼ pound salt pork; diced
  • 1 stalk celery, chopped
  • Pepper to taste
  • 2 cups uncooked rice
  • 2 teaspoons thyme

  • How To Cook:
    1. Fry pork in frying pan. Add cooking oil. Saute the onion until wilted.

    2. Add sweet pepper, celery, thyme and tomato paste, allow to simmer for 5 minutes.

    3. Add pigeon peas and steam for a further 5 minutes. Pour the mixture Into a pot. Add water. Season.
