What You Need: |

2 pounds of chopped callaloo or spinach
2 quarts water
1 pound soup meat
2 slices bacon or a pig's tail
1 pound pre-cooked shrimp
1 dozen okras sliced
1 minced onion
1 diced coco
Salt, pepper, herbs, hot pepper to taste

How To Cook: |
|
|
1. Place meat and bacon in a soup pot with water.
|
2. Boil until meat is tender. Add callaloo, okras, coco and seasonings.
|
3. Simmer until soup has thickened. Remove hot pepper and meat (or may be left in if desired).
|
4. Small flour dumplings (optional) and the shrimps are added. Simmer for 15 minutes longer.
