Stuffed Roast Pork
What You Need:
  • 4½ to 5 pounds pork roast
  • 1 "loaf" bread, grated
  • 1 medium onion, chopped
  • 2 tablespoons tomato paste or tomato sauce
  • ¾ cup (6 ounces) butter or margarine, melted
  • ¼ teaspoon thyme
  • 1 teaspoon parsley, chopped
  • Sweet pepper, chopped, may be added as desired
  • Salt and pepper to taste

  • How To Cook:
    1. Place pork in cooking pot and cover with water. Bring to boil; reduce heat to simmer and cook for about 3 hours or until almost done.

    2. Remove meat from pot and cut several deep gashes in top of meat.

    3. Mix together the remaining ingredients to use for stuffing. Place 1/3 of the stuffing in the bottom of a baking pan; place the meat on top of this.

    4. Spread 1/3 of the stuffing in the deep gashes and the remainder over the top. Dot stuffing with additional butter or margarine.

    5. Bake in a 350°F preheated oven for about 30 minutes or until brown.

    To Serve: 6 - 8
