What You Need: |

3 baldpate doves
2 tablespoons melted butter
1 teaspoon salt
1 teaspoon pepper
Juice of a lime
Fat for basting

How To Cook: |
|
|
1. Prepare doves; wash with lime juice and season.
|
2. Split through the backbone and flatten the birds. Wipe dry.
|
3. Bake in hot oven basting frequently for about 15 minutes.
|
4. Remove from the oven, place under a grill, dribble melted butter over the birds and grill on both sides.
