What You Need: |

1 pig's head (made also with Rabbit using the whole animal)
Water, pimento leaves
Few cloves
Lime and salt to taste

How To Cook: |
|
|
1. Scrape and clean the head and wash with lime juice.
|
2. Cover with water, pimento leaves, salt and cloves. Boil until tender.
|
3. Cut Into chunks discarding the bones.
|
4. Add lime juice to the liquid and pour over the brawn in a casserole.
|
5. Place in the retreater to congeal.
