What You Need: |

1 9-inch unbaked pie shell
2 cups carrots, sliced, cooked and pureed
3 eggs, slightly beaten
½ teaspoon salt
½ teaspoon nutmeg, freshly grated
½ teaspoon ground ginger
1 teaspoon cinnamon
1/8 teaspoon ground cloves
¾ cup evaporated milk, undiluted
1 cup honey
whipped cream

How To Cook: |

|
1. Blend together carrots; eggs, salt and spices; mix thoroughly.
|
2. Add milk and honey, blending until smooth.
|
3. Pour mixture into pie shell. Bake at 400°F for 40 to 50 minutes; cool.
|
4. Garnish with whipped cream or whipped topping mix before serving.
