Coconut Cream Pie
What You Need:
PASTRY
  • cups sifted flour
  • 1 cup shortening
  • Water
  • 1 teaspoon salt
  • 2 tablespoons butter

    FILLING
  • 1 medium size coconut, peeled and grated
  • ¾ pound butter
  • 2 eggs
  • 1 teaspoon vanilla, rum or almond extract
  • 1 cup sugar
  • 2 cups milk

  • How To Cook:
    PASTRY:
    1. In a bowl, mix flour and salt.

    2. With pastry blender or 2 knives cut 2/3 of shortening into flour until it appears like corn meal.

    3. Cut in the remainder of shortening and the butter until it appears grainier.

    4. Sprinkle cold water until dough comes together.

    5. Lightly form the dough into a smooth ball. Roll out and line an 8 inch pan.

    FILLING:
    1. Cream butter and sugar.

    2. Add eggs, one at a time, beating after each addition.

    3. Add milk and coconut and mix well. Pour Into unbaked pie shell.

    4. Bake at 350°F for 40 - 50 minutes.

    To Make: 1 pie
