Codfish Twice Laid
What You Need:
  • 1 pound codfish
  • 1 pound potatoes, boiled & sliced
  • 1 sliced onion
  • 2 tablespoons margarine or butter
  • Breadcrumbs, pepper to taste

  • How To Cook:
    1. Soak fish overnight. Discard water and cover with cold water. Bring to a boil and cook until tender. Skin, bone and flake.

    2. Fry onion lightly and add to the fish. In a casserole dish, place alternate layers of potatoes with fish-onion mixture.

    3. Dot layers with butter and cover with breadcrumbs before baking until golden brown in a moderate oven.
