Jamaican Bun
What You Need:
  • 1 pound flour
  • 2 oz butter
  • 2 oz margarine
  • 2 oz raisins
  • 2 oz mixed peel
  • 2 eggs
  • 6 oz currants
  • ˝ pound brown sugar
  • ˝ teaspoon nutmeg
  • ˝ teaspoon baking powder
  • Enough milk to make a batter

  • How To Cook:
    1. Blend butter and margarine into Flour. Add baking powder, sugar and nutmeg.

    2. Add fruit to flour.

    3. Beat the eggs and pour into the dry mixture adding enough milk to make a batter.

    4. Pour into a greased loaf tin and bake 1˝ hours in a slow oven about 300°F.

    5. Chopped cherries and some lime rind may be added to the mixture if desired.
