What You Need: |

3-4 pounds boned leg of pork (cut into bite size pieces)
1 cup vinegar
Chopped hot pepper
Chopped onion and garlic
Crushed pimento leaves
Pimento grains, salt

How To Cook: |
|
|
1. Marinate the pieces of pork in the marinade for 4 days turning frequently. Keep covered in refrigerator.

2. Take out and wipe dry.
|
3. Cook pork on a grid over burning coals to get a smoky flavor; however, it can also be baked crisp on a baking sheet in the oven.
