How To Cook: |

1. Bring the sugar and water to a boil, dissolve and reduce.

2. Add the grated rind of 1 orange, and the juice of 4 oranges and 1 lime.
|
3. Bring to a boil, strain and cool.
|
4. Semi-freeze. Whisk egg white briskly and add along with wine to mixture.
|
5. Freeze until mushy and serve in parfait glasses.
