Rabbit Fricassee
What You Need:
  • 1 rabbit cut into pieces
  • 2 tablespoons vinegar
  • Oil or fat
  • Salt and pepper
  • 2 sliced onions
  • 2 slices bacon
  • 1 cup chicken broth
  • 2 tablespoons raisins
  • 1 dessertspoon grated chocolate
  • 1 teaspoon sugar

  • How To Cook:
    1. Wash rabbit in vinegar. Pat dry and saute in fat with sliced onions, bacon and seasonings.

    2. Add broth and simmer slowly until rabbit is tender.

    3. Add the sugar, chocolate and raisins to finish cooking.

    4. Do not be afraid of the chocolate, it gives a surprisingly pleasant flavor to this dish.
