What You Need: |

1 pint of red peas (soak overnight)
2 quarts water
1 pound soup meat
¼ pound of pig's tail
1 sliced coco
1 minced onion
Salt, thyme, hot pepper to taste

How To Cook: |
|
|
1. Place peas and meats in water. Boil until peas are almost tender. Add coco and seasonings.
|
2. When peas and coco are cooked, remove the meats.
|
3. Soup may be served with whole peas, or, put through a colander and discord skins.
|
4. Small dumplings are usually added to this soup.
