Stuffed Calapeeva
What You Need:
  • 6 calapeeva (found in Jamaican rivers, or you can use any white fish)
  • 1 cup breadcrumbs
  • Parsley, salt, pepper to taste
  • 1 dessertspoon butter
  • 2 sliced onions
  • 1 tablespoon rum
  • 1 tablespoon oil

  • How To Cook:
    1. Wash and clean fish with lime juice.

    2. Make a stuffing of breadcrumbs, parsley, salt and pepper, moistened with a little melted butter.

    3. Stuff the fish and place on a bed of sliced onions, which have been slightly sauteed in hot oil.

    4. Add 1 tablespoon rum and cover with some breadcrumbs.

    5. Bake in a moderate oven until fish are tender.
