The edible pea of a twining plant of the bean family is called cowpea but is better known as the black-eyed or goober pea. A great Southern favorite, the nutritious pea is made into a number of interesting dishes, including this inexpensive and flavorful salad. Serve with pork or game.

What You Need: |

1 package (10 ounces) frozen black-eyed peas
1 cup shredded raw carrots
1 cup diced tomatoes
˝ cup sliced scallions, with some tops
1/3 cup salad oil
3 tablespoons cider vinegar
1 teaspoon sugar
Several drops Tabasco sauce
Salt, pepper to taste

How To Cook: |
|
|
1. Cook peas according to package directions; drain; and cool.
|
2. Combine peas, carrots, tomatoes, and' scallions in a serving dish.
|
3. Combine remaining ingredients and pour over salad; mix well.
