Bread - Vegetable Salad

What You Need: |
|
|
2 to 3 small rounds pita bread
1 small head leafy lettuce, washed, dried, torn into bite-size pieces, and chilled
1 medium-sized cucumber, peeled and chopped
8 scallions, cleaned and sliced
1 cup chopped fresh parsley
1 cup chopped fresh mint
1/3 cup olive oil
Juice of 2 large lemons
1 or 2 garlic cloves, crushed
Salt, pepper to taste

How To Cook: |
|
|
1. Break bread into small pieces and put in a salad bowl.
|
2. Add lettuce, cucumber, scallions, parsley, and mint; mix well.
|
3. Combine oil, lemon juice, garlic, salt, and pepper and pour over salad.
|
4. Toss lightly and serve.
|
