What You Need: |

1 cup cold, cooked green peas
1 cup diced, cold, cooked beets
1 medium-sized carrot, scraped and grated
1 cup chopped celery
1 small onion, peeled and minced
About ˝ cup mayonnaise or salad dressing
1 cup shredded American cheese
Salt, pepper to taste
Crisp lettuce leaves, washed and dried

How To Cook: |

1. Combine vegetables in a bowl.

2. Add mayonnaise, enough to bind ingredients.
|
3. Fold in cheese. Season with salt and pepper.
|
4. To serve place lettuce leaves in a serving dish and top with salad.
