Early American Wilted Lettuce
This salad is an old and treasured American favorite. It was relished by pioneer families, who made it with greens and cabbage as well as lettuce. Serve with cold meat loaf or cold cuts at an outdoor meal.

What You Need:
  • 4 slices thin bacon, chopped
  • ¼ cup cider vinegar
  • 2 small heads leafy lettuce, washed, dried, and chilled
  • ½ cup sliced scallions, with some tops
  • ½ teaspoon sugar
  • Salt, pepper to taste

  • How To Cook:
    1. Fry bacon in a small skillet until crisp.

    2. Remove and drain on absorbent paper.

    3. Add vinegar to fat and bring to a boil.

    4. Put lettuce leaves, scallions, sugar, salt, and pepper in a bowl.

    5. Pour hot vinegar-fat mixture over salad and toss.

    6. Serve sprinkled with crisp bacon.

    To Serve: 4
