Egyptian Fool
Fool, or beans, are a staple food in Egypt and are eaten the year round. During the winter, this bean salad is served with roast lamb or grilled fish.

What You Need:
  • 2 cups dried white beans, washed and picked over
  • 3 garlic cloves, crushed
  • ˝ cup chopped onions
  • ˝ cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon cayenne
  • Salt, pepper to taste
  • ˝ cup chopped fresh coriander or parsley

  • How To Cook:
    1. Put beans in a large kettle and cover with water. Bring to a boil and cook briskly for 2 minutes.

    2. Remove from heat and let stand, covered, 1 hour. Bring again to a boil.

    3. Lower heat and cook slowly, covered, until beans are just tender, about 1 hour. Do not overcook.

    4. Add more water while cooking, if needed. Drain; cool; and turn into a large bowl.

    5. Add remaining ingredients and mix well.

    6. Serve at room temperature or refrigerate until ready to serve.

    To Serve: 6 - 8
