Frosted Pineapple - Lime Salad Mold

What You Need: |
|
|
1 cup boiling water
2 packages (3 ounces each) lime gelatin
1 cup canned pineapple juice
2 packages (8 ounces each) softened cream cheese
˝ cup mayonnaise, preferably homemade
2 cups diced celery
1 can (20 ounces) crushed, unsweetened pineapple, drained

How To Cook: |
|
|
1. Pour boiling water over gelatin in a large bowl; stir to dissolve.
|
2. Add pineapple juice; mix well. Add cream cheese; whip with rotary or electric beater to blend.
|
3. Stir in mayonnaise, celery, and pineapple; mix well.
|
4. Turn into an 8-cup ring mold and chill several hours until firm.
|
5. Unmold onto a chilled large plate over lettuce leaves, if desired.
|
6. Note: Line the mold with maraschino cherry halves before adding salad, if desired.
