Fruit Salad With Minted Yogurt Dressing
Middle Eastern cooks have created colorful salads with their luscious fresh and dried fruits. Mint is a favorite garnish for many of them.

What You Need:
  • 2 navel oranges, peeled, broken into sections, and white membranes removed
  • 2 cups diced, peeled peaches
  • 1 cup diced, peeled watermelon or cantaloupe
  • 1 cup diced, peeled apricots
  • 1 cup chopped dates
  • ˝ cup golden raisins
  • 1 cup plain yogurt
  • 2 tablespoons orange juice
  • 2 tablespoons chopped fresh mint

  • How To Cook:
    1. Combine fruits, dates, and raisins in a serving dish.

    2. Mix yogurt and orange juice; spoon over salad.

    3. Serve garnished with mint.

    To Serve: 4 - 6
