This appealing Mexican specialty, which is now popular throughout the World, is served as a salad, appetizer, and sauce. There are many versions of guacamole. All are based on well-seasoned mashed or pureed avocados and generally include green chilies, and sometimes tomatoes and finely chopped onions. Other nontraditional additions arc chopped, hard-cooked eggs; crumbled, crisp bacon; chopped nuts; cucumbers; sour cream; mayonnaise; or cottage cheese. It may be served by itself or added to salads made with seafood, chicken, or vegetables. This is a basic recipe for guacamole.

2 medium-sized ripe avocados, seeded and mashed
2 tablespoons fresh lime or lemon juice
¼ cup minced canned green chili peppers
2 tablespoons finely chopped onions
Salt to taste
