What You Need: |

3 cups cold, cooked dried white beans, navy or pea, or canned beans, drained
½ cup olive oil
3 tablespoons fresh lemon juice
½ cup sliced scallions, with some tops
1/3 cup chopped fresh parsley
2 tablespoons chopped fresh mint
¼ teaspoon ground coriander (optional)
Salt, pepper to taste
2 hard-cooked eggs, shelled and cut into quarters
2 tomatoes, peeled and quartered
4 stuffed olives, sliced

How To Cook: |
|
|
1. Combine beans, oil, lemon juice, scallions, parsley, mint, coriander, salt, and pepper in a large bowl.
|
2. Serve garnished with eggs, tomato quarters, and olives.
