Manitoba Jellied Cucumber Salad
The Canadian province of Manitoba is noted for its excellent cucumbers, which are used to make interesting salads such as this one.

What You Need:
  • 1 package (3 ounces) lime gelatin
  • ¾ cup hot water
  • ½ cup cold water
  • 2 tablespoons fresh lemon juice
  • 1 cup sour cream
  • 2 tablespoons minced chives
  • ½ teaspoon dried dill weed
  • 1 cup diced, peeled cucumbers
  • Salt, pepper to taste
  • Watercress leaves, washed and dried

  • How To Cook:
    1. Dissolve gelatin in hot water in a medium bowl.

    2. Stir in cold water and lemon juice.

    3. Add sour cream, chives, and dill weed; heat until smooth.

    4. Chill until mixture thickens slightly.

    5. Fold in cucumbers, season with salt and pepper.

    6. Turn into a 4-cup mold und chill several hours until firm.

    7. When ready to serve, unmold onto a chilled plate and garnish with watercress.

    To Serve: 4 - 6
