New Jersey Mixed Pepper Salad
This easy-to-prepare salad, or relish, is a good winter accompaniment for meat and can be kept in the refrigerator to be used as needed.

What You Need:
  • 2 cups finely chopped green peppers
  • 2 cups finely chopped sweet red peppers
  • 1 medium-sized onion, peeled and chopped
  • ˝ cup sugar
  • 1 teaspoon salt
  • ˝ cup cider vinegar

  • How To Cook:
    1. Combine peppers, onion, sugar, and salt in a bowl or large jar.

    2. Bring vinegar to a boil and pour over pepper mixture.

    3. Let stand 2 to 3 hours before serving.

    4. The salad, tightly covered, will keep in the refrigerator about 1 week.
