Orange - Onion Salad
The Israelis prepare a number of interesting salads with their luscious fruits, such as oranges and avocados. This one is especially yummy. The appealing visual harmony of oranges and red onions is a pleasant bonus.

What You Need:
  • 1 quart bite-size romaine, washed, dried, and chilled
  • 2 large navel oranges, peeled and sliced crosswise
  • 1 large red onion, peeled, sliced, and separated into rings
  • 4 to 5 tablespoons salad oil
  • 2 to 3 tablespoons fresh lemon juice
  • ¼ teaspoon sugar
  • Salt, pepper to taste
  • Fresh mint leaves (optional)

  • How To Cook:
    1. Put romaine in a salad bowl.

    2. Top with orange slices and onion rings.

    3. Combine oil, lemon juice, sugar, salt, and pepper; pour over salad and toss.

    4. Garnish with mint, if desired.

    To Serve: 4 - 6
