What You Need: |

2 medium-sized cold, boiled potatoes, peeled and sliced
2 red apples, peeled, cored, and sliced
1½ cups cold, cooked green beans
About 1 cup mayonnaise
Salt, pepper to taste
2 hard-cooked eggs, shelled and quartered
4 small wedges of lettuce

How To Cook: |
|
|
1. Combine potatoes, apples, and 1¼ cups green beans in a bowl, bind with mayonnaise.
|
2. Season with salt and pepper.
|
3. Spoon onto a serving plate and shape into a mound.
|
4. Coat exterior of salad mound with a thin layer of mayonnaise.
|
5. Garnish top with remaining ¼ cup green beans.
|
6. Surround with egg quarters and lettuce wedges.
