Vegetable Salad With Sour Cream

In Russia a characteristic appetizer, or "zakusky", is a salad of cooked and/or raw vegetables combined with a sour-cream dressing and flavored with dill pickles, capers, or fresh or dried dill. Serve with other foods with pre-meal drinks or as a luncheon first course.

What You Need: |

|
1 cup cold, cooked carrots
1 cup cold, diced, cooked beets
2 cups cold diced, cooked potatoes
1 cup cold, cooked green peas
2 gherkins, minced
About 1 cup sour cream
2 tablespoons wine vinegar
2 tablespoons chopped fresh dill or 1 teaspoon dried dill weed
Salt, pepper to taste
6 large lettuce leaves, washed and dried
1 large tomato, peeled and cut into wedges

How To Cook: |
|
|
1. Combine vegetables and gherkins in a large bowl.
|
2. Mix sour cream, vinegar, dill, salt, and pepper; add to vegetables.
|
3. Refrigerate 1 to 2 hours to blend flavors.
|
4. When ready to serve, place a lettuce leaf on each of six individual plates and top with a mound of salad.

5. Garnish with tomato wedges.
