Vegetable Salad With Sour Cream
In Russia a characteristic appetizer, or "zakusky", is a salad of cooked and/or raw vegetables combined with a sour-cream dressing and flavored with dill pickles, capers, or fresh or dried dill. Serve with other foods with pre-meal drinks or as a luncheon first course.

What You Need:
  • 1 cup cold, cooked carrots
  • 1 cup cold, diced, cooked beets
  • 2 cups cold diced, cooked potatoes
  • 1 cup cold, cooked green peas
  • 2 gherkins, minced
  • About 1 cup sour cream
  • 2 tablespoons wine vinegar
  • 2 tablespoons chopped fresh dill or 1 teaspoon dried dill weed
  • Salt, pepper to taste
  • 6 large lettuce leaves, washed and dried
  • 1 large tomato, peeled and cut into wedges

  • How To Cook:
    1. Combine vegetables and gherkins in a large bowl.

    2. Mix sour cream, vinegar, dill, salt, and pepper; add to vegetables.

    3. Refrigerate 1 to 2 hours to blend flavors.

    4. When ready to serve, place a lettuce leaf on each of six individual plates and top with a mound of salad.

    5. Garnish with tomato wedges.
