Luscious fresh subtropical and tropical fruits are grown in West Africa in great variety. Cooks use them to make colorful salads that are served as side dishes with entrees or as desserts. This one is typical of the many variations.

2 cups sliced bananas
2 cups diced pineapple
2 cups diced guavas
˝ cup honey
3 tablespoons fresh lime or lemon juice
2 teaspoons finely chopped ginger root
