1. Put the tapioca and water into a saucepan, bring to the boil and simmer until the mixture is thick and clear.

2. Peel and core the apples and cut into thick slices. Stone the raisins.

3. Put the apples and raisins into a buttered pie dish and sprinkle with the sugar and grated lemon rind.
|
4. Pour the tapioca over the fruit and bake in a moderate oven (350°F) for about 1 hour, until the pudding is set and the apples are cooked.

5. Sprinkle with caster sugar and serve with cream.
