Beetroot Puree
What You Need:
6 large beetroots
2 oz fat
Pepper and salt to taste
1
tablespoon
of vinegar
2 tablespoons of sour cream
How To Cook:

. Boil beetroots in their skins,
peel
and
sieve
or mince them.

. Put into a
saucepan
with about fat, pepper and salt, vinegar and sour cream.

. Heat well, stirring occasionally.

. This goes well with beef, hare, rabbit or game.
