Cheese Soup
(Kassuppe)
What You Need:
  • 1 pound stale brown bread
  • 1/3 pint dry white wine
  • 1¼ pound cheese
  • Salt
  • 2½ pints boiling water

  • How To Cook:
    1. Cut the bread and the cheese into small, thin slices, and arrange them in alternate layers in a tureen.

    2. Pour the boiling water over, and leave for 2-3 hours.

    3. Pour the whole into a saucepan and cook, carefully crushing the bread and cheese with a wooden spoon.

    4. Add the wine and seasoning before serving.

    To Serve: 4 - 6
