Cherry Tapioca
(Cerises Au Tapioca)
What You Need:
  • 2 oz tapioca
  • 1 pound large ripe cherries
  • 1 pint milk
  • A little brandy
  • Vanilla essence
  • Sugar
  • 1 slice of lemon rind
  • Whipped cream

  • How To Cook:
    1. Soak the tapioca overnight in the milk flavored with the vanilla and lemon rind.

    2. The following day cook it in a double saucepan until it thickens into a jelly; remove the lemon rind.

    3. Stone the cherries, put them into a fireproof dish, moisten with a little brandy, sweeten to taste and leave for an hour.

    4. Pour the tapioca mixture over the cherries and bake in a slow oven (325°F) until cooked 25 - 30 minutes.

    5. Decorate and serve.
