Creamed Mushrooms On Toast
(Croutes Aux Morilles)
What You Need:
  • 1 pound morel mushrooms
  • 8 slices of bread
  • 1/3 pint cream
  • 2 oz butter
  • Juice of 1 lemon
  • Chopped parsley
  • Salt and pepper

  • How To Cook:
    1. Wash the mushrooms several times, put them in cold water and bring to the boil, then immediately remove from the heat and drain.

    2. Cut the mushrooms up and simmer in the cream for about 20 minutes, until the liquid is reduced.

    3. Add the lemon juice and seasonings.

    4. Toast and butter the bread, spread with the mushroom mixture and garnish with chopped parsley.

    To Serve: 4 - 6
