Grisons Meat Doughnuts
What You Need:
  • ¼ cup best olive oil
  • 1 pound white flour
  • ¾ cup hot water
  • Salt
  • 2 eggs
  • Oil or fat for frying

    FOR THE FILLING
  • A piece of white bread (crumb)
  • Grated nutmeg
  • Salt and pepper
  • A little milk
  • Chopped chives
  • ½ pound chopped veal
  • 1 cup cold meat stock
  • ½ pound chopped pork

  • How To Cook:
    1. First make the dough.

    2. Beat the oil with the hot water, add the well-beaten eggs and mix thoroughly.

    3. Put the flour and salt into a bowl, pour in the liquid, and mix to a soft dough, cover and leave to stand for 20 minutes.

    4. Soak the bread in the hot milk and chop it up.

    5. Add the meats, nutmeg, salt, pepper, chives and stock.

    6. Roll out the dough very thinly and divide in two.

    7. Place small portions of filling on one piece, put the other piece on top and press down; using a pastry wheel, cut into small rectangles and cook them gently in hot oil or fat.

    8. Serve with salad or whortleberries.
