Lake Zug Fish
What You Need:
  • Fish (perch, pike, trout)
  • Salt and Pepper
  • Butter
  • Bouquet garni
  • 1 Onion
  • Cloves
  • Flour

  • How To Cook:
    1. Clean the required number of fish and rub them with salt and pepper; make an incision in the back of each and place a sage leaf in it.

    2. Put a generous amount of fresh butter in a shallow baking dish; place the fish in the dish, together with a bouquet garni and onion thickly stuck with cloves.

    3. Put knobs of butter over the top, dust with flour and put (uncovered) in a moderate oven (350°F) for about 35 minutes.

    4. After 15 minutes, baste with the cooking juices; 10 minutes before serving add a glass of white wine.
