Madeira Sauce
What You Need:
2 oz butter
A bouquet garni
2 oz flour
Salt and pepper
1 pint good brown stock

tablespoons
Madeira wine
How To Cook:
1
. Make a brown roux with the butter and flour, stir in the stock

. Add the bouquet garni and seasoning and simmer for 15 minutes, to reduce a little.
3
. Before serving, remove the bouquet garni and add the wine.
