Pascha
Pascha, a traditional Russian Easter dish, is usually eaten with slices of rich yeast cake called koolich.

What You Need:
  • 4 oz butter
  • 2 oz stoned raisins
  • 4 oz sugar
  • 4 oz candied fruits
  • 1 pound cream cheese
  • A pinch of salt
  • A few drops vanilla
  • 2 oz crystallized cherries for decoration
  • 1 gill sour cream

  • How To Cook:
    1. Cream the butter and sugar together until the mixture is light and fluffy, and then add the cream cheese, a little at a time, stirring vigorously.

    2. Add the vanilla essence and the sour cream, with the salt, raisins and chopped fruit.

    3. Line a basin with butter muslin, fill it with the mixture, cover with the muslin and weight it with a plate holding a heavy weight to press it down firmly.

    4. Chill overnight in a cold larder or refrigerator.

    5. Turn out and serve decorated with crystallized cherries.
