Poached Pasties
(Vareniki)

Vareniki make a particularly delicious and useful dish, because they can be served as a savoury or as a sweet, according to the filling. They are excellent stuffed with mashed potatoes, then served with melted butter poured over, and chopped onion or chives. When filled with fruit they can be served with a fruit syrup sauce or sour-cream yoghourt.

What You Need: |

˝ pound flour
1 tablespoon melted butter
˝ teaspoon salt
Cold water
2 egg yolks
Filling (mashed potatoes, cream cheese or stoned cherries, etc.)

How To Cook: |
|
|
1. Sieve together the flour and salt and add the eggs and melted butter and enough water to mix to a stiff paste.
|
2. Roll out very thinly and cut into rounds about 3 inches in diameter.
|
3. Fill one round of the paste with mashed potatoes, cream cheese or stoned cherries, etc. (add seasoning to savoury mixtures and sugar to the fruit).

4. Cover with another round and seal the edges, pressing them together after brushing with a little cold water.
|
5. Poach in boiling water for about 15 minutes.
