Polenta is above all a country dish. In the old-fashioned houses, lacking in all "modem comforts," you will see it being cooked in a battered copper pan, on the hearth of an open fire or on the comer of an old wood burning stove.

What You Need: |

1 pint salted water
1˝ oz butter
8 oz maize flour
1˝ oz grated cheese
|

How To Cook: |
|
|
1. Bring the water to the boil and pour the maize flour in, mixing with a wooden spoon.
|
2. Stirring continuously, cook for 30 minutes.
|
3. When the mass comes away from the sides of the pan, blend in the butter and the grated cheese.
|
4. Turn the mixture out on to a dish which has been rinsed in cold water. (In the Ticino a special round wicker dish or a wooden plank is used.)

5. Serve sliced.

TIP:
|
This Polenta may be served with tomato sauce, or it may be used as accompaniment to a stew or roast.
