Porrentruy Cheese Tart
(Le Gateau Au Fromage De Porrentruy)
In the Ajoie region, where people are fond of this cheese tart, it is the custom to eat it every Monday morning, on the stroke of ten o'clock, with a small glass of white wine. On market day the country people who have come into town have it for their midday meal.

What You Need:
FOR THE PASTRY
  • 8 oz flour
  • 4 oz butter or lard
  • A pinch of salt
  • Water to mix

    FOR THE FILLING
  • 8 oz grated Gruyere or Emmental cheese
  • Salt and pepper
  • Grated nutmeg
  • ¾ oz flour
  • ¼ - ½ pint milk (or half cream and half water)
  • 3 eggs

  • How To Cook:
    1. Make the short crust pastry and line a 9-inch flan ring with it.

    2. Mix all the ingredients for the filling and spread this over the pastry.

    3. Cook in a moderate oven (375°F) for 25-35 minutes and serve hot.

    To Make: 1 tart
