What You Need: |

Perch fillets
Butter
Flour
˝ cup white wine

How To Cook: |
|
|
1. Soak and coat some fish fillets as in Fried Perch Fillets.
|
2. Cook them in butter in a moderate oven (350°F), allowing each side 5 minutes.
|
3. Take them out as soon as they are cooked.
|
4. Leaving the cooking dish in the oven, put into it 3 knobs of butter mixed with flour and discreetly seasoned; allow this to get light brown then dilute with ˝ cup good quality white wine and serve with the fillets.
